    Title: Chicken Bulgur Skillet
    Categories: Poultry, Vegetables, Grains, Herbs, Fruits
    Yield: 4 servings

    1 lb Boned, skinned chicken; in
    - 1" cubes
    2 ts Olive oil
    2 md Carrots; chopped
    2/3 c Chopped onion
    3 tb Chopped walnuts
    1/2 ts Caraway seeds
    1/4 ts Ground cumin
    1 1/2 c Bulgur
    2 c Chicken broth
    2 tb Raisins
    1/4 ts Salt
    1/8 ts Ground cinnamon

    In a large cast-iron or other heavy skillet, cook
    chicken in oil over medium-high heat until meat is no
    longer pink. Remove and keep warm. In the same skillet,
    cook and stir the carrots, onion, nuts, caraway seeds
    and cumin until onion starts to brown, 3-4 minutes.

    Stir in bulgur. Gradually add broth; bring to a boil
    over medium heat. Reduce heat; add the raisins, salt,
    cinnamon and chicken. Cover and simmer until bulgur is
    tender, 12-15 minutes.

    Title: Honey Cake
    Categories: Cakes, Desserts, Dairy, Fruits
    Yield: 12 servings

    1/2 c Butter; softened
    1 c Honey
    2 lg Eggs, room temperature
    1/2 c Plain yogurt
    1 ts Vanilla extract
    2 c A-P flour
    2 ts Baking powder
    1/2 ts Salt
    Assorted fresh fruit and
    - additional honey
    Chopped pistachios; opt

    Preheat oven to 350ºF/175ºC.

    Grease a 9" cast-iron skillet.

    In a large bowl, beat butter and honey until blended.
    Add eggs, 1 at a time, beating well after each addition.
    Beat in yogurt and vanilla. In another bowl, whisk
    flour, baking powder and salt; add to butter mixture.
    Transfer batter to prepared skillet.

    Bake until a toothpick inserted in center comes out
    clean, 30-35 minutes. Cool completely in pan on a wire
    rack. Serve with fruit, additional honey and, if
    desired, chopped pistachios.
