2 tb Butter or oil
2 tb Whole wheat flour
2 c Milk
Salt
1/2 c Tahini
Melt the butter in a heavy saucepan and stir in the flour. Cook this
mixture over a gentle flame for a minute or two. Remove from the heat.
Blend in the milk, very gradually, a little at a time. A wire whisk
helps with this. It will sizzle and boil. If you add it all at once
or can't blend properly, the sauce will be lumpy. When all the milk
is added and the mixture is very smooth, return it to the heat and
gently bring it to a simmer. Stir it constantly. Simmer it for 3 to 4
minutes until it is nice and thick. Stir in 1/2 cup tahini and
continue cooking for a few miuntes. Goes well with wheat grain.
