3 c Gooseberries
1/3 c Honey or sugar; to taste
3/4 c Thick cream
Top and tail the gooseberries and stew them very gently in a little
water until soft. Mix in enough honey or sugar to sweeten them. Blend
with the cream. Cool and serve in small individual dishes.
Note:
Elder flowers add an interesting subtle flavor. Throw in a spray or
two of elder flowers while stewing them. Leave in for just a few
minutes, then discard.
