16 Dried apricots
1 c Water
3 c Milk
4 tb Sugar
4 tb Corn starch
1 Lemon; grated rind &
- juice of
Honey; for extra sweetening
Cover the dried apricots with water and simmer them for 15 minutes
until very soft. Blend until smooth with 1 cup milk in a blender.
Heat 1-1/2 cup milk in a separate pan. Dissolve the sugar and corn
starch in the remaining milk in a big bowl. When the milk is almost
boiling, pour it into the mixture, stirring it, and then return all
the mixture to the pan and reheat. Stir constantly until the corn
starch thickens. Add the apricot puree. Add the lemon and mix well.
Sweeten with honey if you like. Transfer the blancmange to a mold or
dish and leave to set.
