Unicorn's Broccoli & Mushroom Quesadillas

1 md Onion -- chopped
8 oz Fresh mushrooms -- sliced
2 cl Garlic -- minced
1 pn Parsley
Oregano
Basil
2 tb Butter
8 Flour tortillas
2 c Broccoli -- steamed, chopped
2 c Mild cheddar cheese -- grated
Saute the onion; mushrooms, garlic, and herbs in the butter over
medium heat until lightly browned, about 10 minutes. Spoon this
mixture over 4 tortillas that have been placed on lightly greased
cookie sheets. Top each tortilla with broccoli and cheese and a
2nd tortilla. Bake in a 350?F oven until cheese melts, about
10 minutes. Cut each quesadilla into wedges to serve.
Yield: 4 Servings
