Corn, Scallion And Red Pepper Quesadilla

4 lg Flour tortillas
1 c Monterey jack cheese -- grated
1/2 c Fresh or frozen corn -- thawed
1/2 Scallion -- thinly sliced
1/2 Red bell pepper --
- seeded & chopped
2 tb Cilantro -- chopped
Preheat oven to 375?F. Place 2 tortillas on baking sheet and top
with cheese, corn, scallion, red pepper, and cilantro. Top with
emaining two tortillas and bake for 10 minutes or until cheese melts.
Variation:
Substitute any leftover cooked vegetables for fresh vegetables.
