1 1/2 c All-purpose flour
1 1/2 c Whole wheat pastry or
- whole spelt flour
1/3 c Cane sugar
1 tb Baking powder
1 tb Orange rind; finely grated
1 c Thompson raisins or
- dried currants

2/3 c Vegetable spread; cold
2 tb Lemon juice
1/2 c Almond milk; unsweetened
1 Orange; juice of
1 tb Ground flax seed
MMMMM--------------------VEGETARIAN VARIATION-------------------------
1/2 ts Salt
1/2 c Unsalted butter; cold
1/2 c Buttermilk
2 Eggs; beaten
1 Orange; juice of
Total time: 40 minutes
Preheat oven to 375?F. Place raisins or currants in a bowl, cover
with boiling water for 5 minutes, then drain into a colander and set
aside. Combine dry ingredients.
Vegan:
Combine almond milk, lemon juice, and orange juice to make 1-1/4 cups
liquid. Stir in ground flax seed.
Vegetarian:
Combine buttermilk, eggs, and orange juice to make 1-1/4 cups liquid.
Grate orange rind into the dry ingredients. Cut in butter or vegetable
spread with a pastry blender until the mixture is mealy. Add the
raisins or currants, and liquid, mix together to make a soft dough.
Dough can even be sticky. Knead dough lightly for 5 minutes on a
floured surface until it forms a ball. Divide and pat into two 6"
rounds and slice each into 6 wedges. Arrange on baking sheet and bake
for 20 to 25 minutes, middle of the oven, until lightly browned.
Slide onto a rack to cool for a few minutes.
Tips:
Easy and flexible to make. Just add a little water if the dough is
very stiff, and a bit more flour if it seems too sticky. You'll need
a cookie sheet to bake them on.
Omit the salt if you use salted butter or vegetable spread.
